
Greek Chicken Gyro Pita Bread Pizzas
Chicken gyros transformed into HEALTHY pita bread pizzas! Chicken, tzatziki sauce, tomatoes, cucumbers, onions, and feta on pita bread!
What you need

skinless boneless chicken breast
dried oregano

tsp kosher salt
tsp fresh ground black pepper

tbsp red wine vinegar

tbsp lemon juice
oz plain greek yogurt
english cucumber

clove garlic

tbsp white wine vinegar

tsp dried dill weed

pinch sugar

pita bread

cup tomato

cup feta

cup red onion

fresh parsley
Instructions
Chicken: -1 To a large skillet, add the oil, chicken, evenly sprinkle with oregano, salt, pepper, and cook over medium-high heat forĀ about 5 minutes, flipping intermittently so all sides cook evenly. -1 When chicken is about 90% cooked through, reduce the heat to medium-low, add the red wine vinegar, lemon juice (use caution because it will bubble up), and allow chicken to simmer another 1 to 2 minutes, or until done. Cooking time will vary based on thickness of chicken breasts and sizes of pieces. -1 Set pan aside off the heat while you assemble the salad. Tzatziki Sauce: -1 To a medium bowl, add all ingredients, whisk to combine, taste, and check for flavor balance. Add additional salt, pepper, lemon juice, pinch sugar, etc. if necessary, to taste. Pizza Assembly: -1 Lightly toast each piece of pita bread. You have a few options for this: toast over a low flame on a gas stove, grill briefly on an outdoor gas grill or indoor grill pan, bake for about 10 minutes in a 450F oven (or until lightly crisp), or simply add to your toaster. -1 To each pita bread, add a light coating of tzatziki sauce or to taste, and evenly top with all remaining ingredients, to taste.
