What you need

cup salted butter

cup heavy cream

garlic

cup sour cream

lb bacon

cup shredded cheddar

tsp salt
tsp fresh ground black pepper

tsp fresh chives
Instructions
-1 To a large stockpot, add the potatoes, cover with 1-inch water above them, and bring to a boil over medium heat. Boil for about 15 to 20 minutes, or until tender and done; don't overcook. -1 Drain potatoes well and then return them back to the stockpot. -1 Using a potato masher, mash them by hand until they’re mostly smooth with a few lumps. -1 Add all remaining ingredients, and stir to combine. Taste and if desired, add additional salt and pepper. -1 Optionally garnish with chives or green onions and serve. Potatoes will keep airtight in the fridge for up to 1 week and in the freezer for up to 4 months. Reheat gently and you will likely need to add additional cream or milk when reheating if the potatoes have thickened up. *See Notes for Make Ahead and Casserole Style Directions.View original recipe
